The Chef, Jean Fréderic Leonhard, a gastronomic genius
Born in Alsace in the small village of Niedermodern, Jean Fréderic started his career in cuisine at 16 years old at the European hotel and catering training centre CEFPPA, located in Illkirch-Graffenstaden. He was passionate about it from the very start!
He started work at an establishment with a great reputation - with Anne Ernwein, member of the Chefs Etoilés of Alsace, the Club Prosper Montagné, a Chef and Maître Cuisinier of France since 2007, at the gastronomic restaurant A l’Agneau in Pfaffenhoffen. He obtained his professional qualification there in 2009. He was so passionate and was so keen to learn and practice his new skills that he also spent his free time developing recipes alongside further training until 2012.
Jean Frédéric has a competitive nature, and participated in the young chefs' competition Jardin des Délices at the European fair in Strasbourg in 2008 and 2009 and won a silver medal.
In 2010, Jean Fréderic trained with the master pâtissier-chocolatier Daniel Rebert at Wissembourg Relais Dessert International, and obtained his baccalauréat in cuisine following his apprenticeship.
Jean Frédéric continued his training in Strasbourg with Messrs André Schott and Philippe Volck, Master pastry-maker-confectioner-ice-cream-maker-chocolatier at the Kubler pastry shop, one of Strasbourg's most illustrious pastry shops, in 2011, earning his "mention complémentaire cuisinier en dessert de restaurant". The same year, he took part in the first contemporary cuisine competition in Colmar, presided over by Olivier Nasti (crowned Meilleur Ouvrier de France in 2007), and won 2nd prize.
As soon as he had won the latter, Jean Frédéric headed off to Jakarta, Indonesia, to work as an assistant at Gilles Marx's Amuz Gourmet Restaurant. He then moved on brilliantly to various establishments such as the Palace Les Airelles in Courchevel with chef David Millet, the Pan Dei Palais relais et château with chef Renaud Capelle, and naturally climbed the ladder.
In August 2014, he moved closer to his native region, settling down at Les Jardins de Sophie in Xonrupt Longemer with Chef Hervé Cune, a virtuoso of local gastronomy. Chef Cune placed his trust in him, and put him in charge of his bistronomic restaurant La P'tite Sophie in October 2016 in the heart of Gérardmer. They created the menus together, and Jean Frédéric added his own personal touch, focusing on originality and the combination of exotic flavors inspired by his personal travels.
Now completely autonomous, Chef Jean Frederic Leonhard has the talent and mastery to offer a culinary experience of the highest quality.
Every lunchtime we offer two set menus at 21€ (2 dishes) or 25€ (3 dishes), excluding drinks. The chef selects his products each day to offer high-quality seasonal dishes.
